For voltaic cell notation how do you know when to include Pt(s) and when not to.... Need help ASAP... test tonight!

When an inert electrode is needed; i.e., in a cell where Fe^2+/Fe^3+ is used you need a solid to dip into the solution. Hope this helps. Good luck.
