How do I draw a graph comparing eyes & ears. If you remember numbers better with your eyes or ears?

It depends on what you are going to use to compare the difference.
suppose there were 20 people and 5 remembered better if they heard the numbers and 15 remembered better if they saw them. That could be a bar graph.
If you were going to use a % right, you might want to make a graph with two lines on it. One representing ears and one representing lines.
