When my hen is sitting on her eggs, when I stick some foreign object to her, her neck feathers go up and she glares at it menacingly. Then she pecks it sharply and I quickly retreat my object. And so, "sitting-hen" mad means that someone is as mad as a hen when she is sitting on her eggs.
