I have multiple ideas and I made up a couple and found a few quotes but they don't seem like good thesis statements;
1. There are survivors of the Holocaust, Jewish survivors and Nazi soldiers.
2. During World War || the experiences of Jewish individuals or communities living under Nazi occupation were appalling, why?

Don't use quotations for thesis statements. Those are OTHER people's words.
Of the ones you wrote, this would work fine:

… although you should undoubtedly think of an even stronger word than "appalling."
