5. Cooking pasta sauce with wine? Use bad wine, from your list, Monk's wine is ok for Sacrements,but it will never win any taste or bouquet awards.

18. A lot of book nonsense tells folks how to store wine, temp, humidity. The book answer is 70percent or greater humidity, and a lot of folks sell cabinets for $$ to do that, and a lot of folks spend $$ to buy them. My experience is to keep wines out of light, and not worry about temp or humidity (unless you have cheap corks).
