Could some explain the following question to me:

Explain the differences between the intermolecualr forces in soap made from Lard and the intermolecular sources in soap made from walnut oil?

1 answer

Intermolecular forces in a solid (lard) are stronger than intermolecular forces in a liquid (oil). The intermolecular forces in saturated fatty acids which are the main components of solid fats are stronger than those in unsaturated fatty acids which are more common in oils.
Soaps are salts containing Na+, K+, or other positive ions with a fatty acid anion (a molecule with an H+ ion removed from the carboxyl end of the long fatty acid chain). The physical properties of a soap depend on this fatty acid chain.
