Amylase is secreted by your pancreas into your small intestine where amylase helps you digest the starches in your diet. Amylase does this because it is an enzyme, a protein that catalyzes a chemical reaction. In this case, amylase catalyzes the breakdown, or hydrolysis, of starch molecules into smaller molecules. Starch is a very long polymer of glucose molecules and the smaller fragments generated by amylase can then be further digested by other enzymes into individual glucose molecules. These glucose molecules are then absorbed into your blood and taken up by your body's cells.
