I have no idea what your graph shows. However, if you can read from the graph these figures I can show you how to use them.
solubility KNO3 (grams/100cc) at 70.0 C (call this A)
Solubility KNO3 (grams/100 cc) at 55 0 C.(call this B)

Therefore, at 70.0 C you will have that A grams/100 cc dissolved.

When you cool it to 55.0 C, the solubility is B grams/100 cc. Then A-B will be the amount that crystallizes.
