So I did a lab that consist of baking cookies and the mass of the final products isn't equal to the ingredients used. Could there be mass lost as gas ? What other factors might there be? Thanks

Most cookies use baking powder or baking soda, both which lose gas (CO2) on heating or mixing with acid.
