For nous, do you pluralize the adjective? For example "nous sommes bizarres?"

Yes, you do in practically all cases.

The exception is in formal usage when "nous" is used to stand for one single person. This usage is called the "nous de majesté ou de modesté".

Note:
Do not forget the gender, as in:
"Nous sommes étonnées..." for a group of females speaking.

Do not mix up “nous” and “vous”
Vous is used to address more than one person or to address one person formally
Thus , « vous êtes bizarres », or « vous êtes bizarre » are both possible
