How has the job of a sous chef changed over time?
I'm not too sure about this. Sous chef has always worked for the head chef and has always done what the head chef has told him/her to do.

Many years ago, the sous chef was an assistant to the Executive CHef, and usually was responsible for sauces, gravies, condiments, cleanliness of the kitchen and pantry, and often in charge of the herb garden. In recent years, that job has became an administrative job, ordering, menu, facilities, manager, leaving to the executive chef food issues.
