                The rainbow salads are due to the pigments of the vegetables. Beta-lains or lycopene in red coloured fruits and vegetables, antocyanins are purples, chlorophylls are greens, carotenoids provide yellow to orange and etc. These colours have phytochemical properties. Identify one each of the phytochemicals in the colours of your salad, (orange in carrot, purple in onion, greens in lettuce and capsicum, white in potato, and red as well and state how these chemicals and body functions.
