The rainbow salads are due to the pigments of the vegetables. Beta-lains or lycopene in red colored fruits and vegetables, antocyanins are purples, chlorophylls are greens, carotenoids provide yellow to orange and etc. These colors have phytochemical properties. Identify one each of the phytochemicals in the colors of your salads, (orange in carrots, purple in onion, green in lettuce and capsicum, white in potatoes and reds as well. And state how these chemicals aid body functions.
