Now yogurt is a curious dish. Have you ever had Turkish (or Greek) yogurt? It is like a custard, very much unlike that soft stuff we get in the stores in the US (unless you go to a import store). It is almost (not quite) like a soft cheese, very little moisture.
A very nice ice-cream is made in Central Turkey, and a variation of it is made with Goat yougart, sugar and sahlep powder (dried powdered roots of a mountain orchid - Orchis Latifolia or Orchis Anatolica in Latin). This is a dessert one will never forget. The orchid is becoming rare.
