Organic solvents consist generally of non-polar molecules. Ionic compounds are made of electrically charged particles which are not attracted strongly by non-polar molecules.
Covalent (molecular compounds) tend to dissolve in solvents with similar structure. Most organic compounds are molecular (covalent) and would tend to dissolve in solvents with a similar structure.
