f(x) = x2 − 2x + 3, f(8 + h) − f(8)/H

just plug and chug
f(8+h)-f(8) = (8+h)^2 - 2(8+h) + 3 - (8^2-2*8+3) = h^2 + 14h
so the quotient is just h+14
