Clay is essentially insoluble in wine and small clay particles form a suspension. With time the clay settles, under the influence of gravity, to the bottom.

You had a mixture, not a solution. The clay did not dissolve in the water, the particles just mixed with the water. The density of the clay particles is greater than the density of water so they drifted to the bottom, leaving clear water above.
