It starts in the mouth but most of the absorption takes place elsewhere.

It's the small intestine. The small intestine absorbs all the nutrients before it goes through the large intestine and goes out of the body. The stomach breaks down, or digest, yes it does absorb, but the small intestine is the organ that absorbs the most.
