Well, I don't know what your text materials do say. Trench warfare was much more "the rule" on the Western Front, that's true. I think there might be a better answer, though.

Well if Russia was going through all those troubles and could barely keep afloat during the war, wouldn't they just surrender?

Well, Russia did not surrender. They withdrew. There is a difference. By withdrawing, they accepted their losses and just quit when the Revolution occurred.
