Is that a name in the parentheses? Or part of a title? Or what?

One food that’s found in the Midwest is Goetta, “which is made from mixed pork, beef, oaks and seasonings, packaged into a roll and then fried and severed hot”(“Josen”).
The part that in quotes is so plagiarism does not show up in my paper.

I'm asking what the word is that's is in quotations AND parentheses. What is that? A name? Part of a title? Or what?
I think the quotations in the parentheses need to be removed, but I can't be sure until you tell me what that word is.
Also, there needs to be a space between the quotations marks and the first parenthesis.

<b>"which is made from mixed pork, beef, oaks and seasonings, packaged into a roll and then fried and severed hot”</b>(<u>“Josen”</u>).
I know what the quotation itself is -- the part I put in <b>bold</b> above.
What I'm asking about is the word that I've <u>underslined</u> above? What is it? A name? Part of a title? Or what?
