Children of what age? These things differ by age group.
birth thru 12 not giving me given age ive been stuck on this question it seems to discuss toddler years
Each of these is very different, depending on the age range.

You'd use air writing when children are first learning to print or write letters. This has nothing to do with organizing thoughts, but is used to learn their letters.

There are different kinds of mind mapping and would be used with children who are learning to write paragraphs and short essays.

I don't know how "title" and "alphabet line" would figure into organizing "their ideas for writing."

You're welcome. I hope I'm interpreting all this right!
