When milk and baking soda are mixed together, a reaction takes place. Baking soda is a base (alkaline) and when it comes into contact with the acidic components in the milk (such as lactic acid), it causes a chemical reaction called neutralization. This reaction produces carbon dioxide gas, which causes the mixture to bubble and foam. The foam created is due to the release of carbon dioxide gas bubbles. In addition to this reaction, the milk may also curdle due to the change in pH caused by the baking soda.
