You use the relative pronoun "that" for essential clauses, which are important for the sentence's meaning and cannot be removed without changing it. For example, in the sentence "The book that I borrowed is interesting," the part "that I borrowed" tells us which book we're talking about. On the other hand, "which" is used in nonessential clauses, which add extra information but can be left out, like in "My favorite book, which I borrowed from the library, is interesting," where the extra information can be skipped and the main idea still makes sense.
