We use "that" for essential clauses and "which" for nonessential clauses. An essential clause gives important information about a noun that we need to know, while a nonessential clause adds extra details but isn’t necessary to understand the sentence. For example, in “The book that I read was exciting,” "that I read" tells us exactly which book. In “The book, which I read last week, was exciting,” "which I read last week" just adds extra information about the book but isn't needed to know which book we're talking about.
