Design Brief: Nutritious Meal for Refugees
Problem: Refugees often struggle to get healthy meals in camps because they have limited cooking tools, no fridges, and sometimes don’t know the local foods.
Goal: To create an easy, healthy meal for 100 refugees that is familiar to them and can be made in a camp.
Proposed Meal: Lentil and vegetable stew with rice.
Nutritional Benefits: This meal is packed with protein from lentils, carbs from rice, and vitamins from vegetables.
Needed Equipment:
- Two large pots (15 liters each)
- Cooking tools (ladle and spoon)
- A fire pit or portable stove
- Big serving containers
Ingredients:
- 5 kg lentils
- 10 kg mixed vegetables (carrots, potatoes, spinach)
- 5 kg rice
- 2 kg onions
- 1 kg garlic
- 1 kg salt
- 500 ml vegetable oil
- Spices (cumin, pepper) to taste
Cooking Steps:
- Rinse lentils and soak them for 30 minutes if you can.
- Chop the vegetables and onions.
- Heat oil in a large pot, sauté onions and garlic until golden.
- Add chopped veggies and cook for a few minutes.
- Then add lentils, 20 liters of water, salt, and spices. Cook for 30-40 minutes until everything is soft.
- In another pot, boil water and cook rice for 15-20 minutes.
- Serve the stew over the rice.
