In the sentences above, what does "Yosemite" mean?
Is it Yosemite Valley or Yosemite National Park?

I'd take "Yosemite" in 1 and 2 as the national park. When referring to Yosemite Valley itself, we usually include the word "Valley."
3 is incorrect. You don't need "the" -- and I think 3 and 5 mean about the same thing.
4 makes good sense.
3 and 5 make some sense because you can walk around the valley, but you'd be <b>hiking</b> in mountains if you went to other parts of the park. And if you decide to scale El Capitan, you'd be <b>rock climbing</b>!
