I'm suppose to solve
log(3)-27=x
I get 3^x=-27
I can't go any father correct?

Logarithm of a negative number is imaginary. If you try plotting y = log x, you'll see that the x values are all positive and infinitely approaches zero.
So does that mean x=3? (so 3x3x3=27)
No, there is no solution, since log(any negative) is undefined.
For the equation to be true, you correctly stated that
3^x = -27
I suggest you look at the graph of
y = 3^x and see where the y value is -27.
