missing a decimal point ... pH = 6.4

pH is the negative log of the H+ ion concentration

yolk ... log[H+]= -6.4

more alkaline means more negative [H+]
... fewer H+ ions

white ... log([H+] / 63) = log[H+] - log(63)
... change the sign for the pH
