Pho Recipe
Ingredients:

For the Broth:
- 3 pounds beef bones (preferably knuckle bones and brisket)
- 1 onion, halved
- 1 ginger root, halved
- 6-8 star anise
- 1 cinnamon stick
- 3-4 whole cloves
- 1 tablespoon coriander seeds
- 1 tablespoon salt
- 1 tablespoon sugar
- 12 cups water

- 1 pound rice noodles (bánh phở)
- 1 pound beef (thinly sliced, such as sirloin or brisket)
- Fresh herbs (basil, cilantro, and mint)
- Bean sprouts
- Lime wedges
- Sliced jalapeños or chili peppers
- Hoisin sauce (for serving)
- Sriracha sauce (for serving)
Instructions:

Prepare the Broth:
- In a large pot, add the beef bones and cover with water. Bring to a boil and let it boil for 10–15 minutes. Discard the water and rinse the bones to remove impurities.
- In the same pot, add the cleaned beef bones back in along with the onion, ginger, star anise, cinnamon stick, cloves, coriander seeds, salt, sugar, and 12 cups of fresh water.
- Bring to a simmer and cook for 4-6 hours, skimming off any foam that rises to the surface. The longer it simmers, the richer the broth will be.

Cook the Rice Noodles:
- Cook the rice noodles according to package instructions. Drain and rinse with cold water.

Assemble the Pho:
- In each bowl, layer the cooked rice noodles and raw beef slices. Ladle the hot broth over the noodles and meat to cook the beef.
- Top with fresh herbs, bean sprouts, and a squeeze of lime. Serve with hoisin and sriracha sauces on the side.
