At what rate would a 75kg person travel during a slip/fall on a wet surface to the landing position? And what would be the force of the fall?

What matters is the person's height and weight distribution. A 75 kg person will have height about 1.8 m with a center of mass at H = 0.9 m.
The speed when he or she hits the ground will be about sqrt(2gH)= 4 m/s
The force of the fall will depend upon the type of clothing worn. Clothes exert a "cushioning" effect.
