why would the temperature be higher when making Ammonium Sulphate then when making ammonium nitrate? something to do with hydrogen ions?

Do you mean the temperature becomes higher or you must heat it to a higher T. How are you making it? Without knowing more details I expect it has to do with adding H2SO4/water. Hyderating H2SO4 is a highly exothermic reaction.
