does tofu have any naturally occuring bacteria in it? When I incubated the tofu juice, a white bacteria grew, but I can't find any information stating what it might be.

It should not have an "natural" bacteria in it. Bacteria are not used in the production process. Tofu is an excellent medium for bacteria growth, so any bacteria in the air or surfaces near it will contaminate it readily.
