Why doesn't the hydrogen produced in the Lithium/water reaction catch fire?

I suppose you mean why doesn't it catch fire spontaneously? It will burn, or course, actually will explode, if started with a match or other igniter (a spark will do). However, the activation energy of hydrogen is high enough that it must be given a "spark" of energy to start it.
