when they talk about proof in regards to alcohol. how is proof determined. how do you proof alcohol.

The "proof" of alcohol is a number, not something that somebody proves.
Proof is twice the ethyl alcohol percent by mass. A 94 proof alcoholic beverage, such as Beefeater gin, is 47% alcohol
