Turkey Burritos Recipe

Ingredients:

For the Turkey Filling:

  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper (red or green), diced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (canned, frozen, or fresh)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and pepper to taste
  • 1 tablespoon fresh lime juice (about half a lime)

For Assembling the Burritos:

  • 4 large flour tortillas (10-12 inches)
  • 1 cup cooked rice (white or brown; optional)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • Sour cream or Greek yogurt (for topping)
  • Salsa or pico de gallo (for topping)
  • Fresh cilantro (for garnish; optional)

Instructions:

  1. Prepare the Turkey Filling:

    • In a large skillet, heat the olive oil over medium heat.
    • Add the diced onion and bell pepper, and sauté for about 3-4 minutes until softened.
    • Add minced garlic and cook for another minute until fragrant.
    • Add the ground turkey to the skillet, breaking it up with a spatula. Cook until browned and cooked through (about 6-8 minutes).
    • Stir in the black beans, corn, cumin, chili powder, smoked paprika (if using), salt, pepper, and lime juice. Cook for an additional 2-3 minutes until heated through. Remove from heat.
  2. Assemble the Burritos:

    • Lay a tortilla flat on a clean surface or plate.
    • If using, spread a spoonful of cooked rice in the center of the tortilla.
    • Spoon some of the turkey filling on top of the rice (about 1/4 of the filling).
    • Sprinkle a generous amount of shredded cheese on top of the filling.
    • Fold in the sides of the tortilla and then roll it up from the bottom, tucking in the sides as you go to form a burrito.
  3. Cook the Burritos (Optional):

    • If you prefer a crispy burrito, heat a skillet over medium heat and place the burrito seam-side down.
    • Cook for about 2-3 minutes on each side until golden and crispy.
  4. Serve:

    • Slice the burritos in half, if desired, and serve with sour cream, salsa, and garnish with fresh cilantro.

Enjoy!
