He is called the Father of the Ice Cream because he created new recipes and better techniques for making the popular cold treat. He became one of the wealthiest African Americans in Philadelphia.
Augustus Jackson was born to a poor African American family on April 16, 1808 in Philadelphia, Pennsylvania. When he was 12 years old, he started working in the White House as a servant. Soon, he became one of the top chefs there, and he kept that job until 1830. During the time of Augustus Jackson, many African Americans owned ice-cream parlors or were ice-cream makers in Philadelphia. Then, cold custards were fashionable. Custards were cooled after setting them on a cake of ice.
After leaving his job in the White House, Augustus Jackson returned to his hometown in Philadelphia and began his business of catering and creating confectioneries such as licorice, lemon drops, and fudge. In 1832, he developed an improved method of making ice cream, which he began to sell to street vendors as well as ice-cream parlors for one dollar a quart.
One of the techniques was mixing salt, flavoring, and cream, and the other was to control the custard while it was freezing. He discovered that ice mixed with salt could lower and control the temperature of his special mix of ingredients. Jackson conceived the idea of freezing them. He did so by placing the custard in a tin bucket completely covered with ice. Each bucket contained a quart of the frozen treat and cost a dollar. Street vendors as well as ice-cream parlors began purchasing Jackson’s invention.
Some of the flavors Jackson came up with, such as strawberry, vanilla, and mint, are still popular. Jackson didn’t apply for any patents. The success that Augustus Jackson achieved in his lifetime is extremely impressive. He overcame many hardships, poverty, and servitude to become a successful businessman.
