why doea a rising parcel of unsaturated air cool more rapidly than a rising parcel of saturated air??

The specific heat of water vapor is very high compared to Nitrogen gas. It takes a lot more heat loss to lower the temp of a kg of water one degree than to lower the temp of air one degree.
