    Essentially the same way everyone else does. You want to know how much you weigh? So you use a calibrated scale to record your weight. A scientist wants to know how much gold is in a beaker; s/he weighs it. Rework that sentence to refer to measurements of volume, mass, time, you name it and you have your answer.
