Would y=Absolute value x and y=absolute value -x essentially give the same piece wise functions? Cause they have the same graph?

since |x| = |-x| I'd say so.
technically, |-x| is a reflection of |x| across the y-axis, but since that is the axis of symmetry, the graphs are identical.
