    Your best bet is to Google this to get an in depth discussion. A starch is a polysaccharide which is a group of simple sugars chained together. Monosaccharides are the simplest, two of those combine to form a disaccharide, and many chain together to form starches.  Amylase is a catalyst that lowers the activation energy of a reaction to allow a reaction to take place more efficiently at lower temperatures.
