You don't say what experiment you performed but PROBABLY you used an acid (perhaps HCl) and the NaHCO3 was there to neutralize any acid after the reaction. The gas was CO2.
NaHCO3 + H^+ ==> H2O + CO3 + Na^+
NaHCO3 + H^+ ==> H2O + CO3 + Na^+
