How do you monitor the hydrolysis of Dextrin by an acid?

I think there are a number of ways to do it but I would use optical activity since I think that is the easiest. You can read about dextrins here
https://en.wikipedia.org/wiki/Dextrin but look under optical activity to see how to use that to monitor dextrin activity.
