It is due primarily to oxidation (by air) of enzymes in the fruit. Googling, as suggested by Scott, will get you a lot of information which you can distill and end up with a good paper.

Fruit gets brown because it is not connected to the place where it started growing. Once you cut it off it starts dying even if it looks good.
