You're making a big deal out of balancing. You count the atoms on one side and make the number balance with those on the other side. If the number is the same it is balanced. If they are not the same the equation is not balanced. Let's look at your numbers. Here they are.
2NH4OH(aq) → H2O(l) + 2NH3(g)
2N on left. 2N on right. OK.
10 H on left (5H in NH4OH x 2 = 10) and 8 H on right(2 H from H2O and 6H from 2NH3). So H is not balanced. You KNOW, without any doubt that 2,1.2 coefficients are not right. Basically, you NEVER are unsure about an equation being balanced. You KNOW it is right or you KNOW is is not right. Just count the atoms on both sides and you KNOW.
