If you're referring to all the hair on your head, you just use "hair." But if you are referring to one or two, perhaps on your shoulder or your jacket, then you'd refer to the "hairs on my jacket" (or whatever), indicating they had come loose from the rest of the hair on your head.

We also refer to cat hairs or dog hairs when we come across some that have been shed and are not part of the cat's or dog's fur anymore.
