I don't know about water forms. Water forms when ice melts. I would change that to read "new products formed". On the color change, I would write it as a permanent color change. I can't think of any more that is worthy of adding.

Change in odor or taste (but I wouldn't recommend tasting).

change in melting point or boiling point.
change in electrical conductivity.
And there must be others.
(Actually, change in odor could be included in gas formation. Change in electrical conductivity might be included in water formation.)

I think "water forms" is an euphemism for "slightly ionized material forms."
