-1 < X - 2 LESS THAN OR EQUAL TO 7

Add 2 to all three quantities to get x by itself:

-1 + 2 < x - 2 + 2 ≤ 7 + 2

1 < x ≤ 9

Solution set can be expressed this way using interval notation:
(1, 9]
