what is the chemical relationship between pectin and pectinase and is is caused by dehydrtions synthesis or hydroysis?

Pectinase is a group of enzymes that allow for cleavage of the Pectin molecule. Hydroysis is the best classification of the above.
I'm not a biochemist but from what I can read on the internet, pectin consists methyl esters and is broken down by pectinase into short chain fatty acids. If that is so, then breaking an ester into the acids means it was hydrolysis. I'm assuming the typo in the last line of your question was meant to be dehydration.
