why can't denaturation of an egg or milk be reversed

The proteins undergo a chemical reaction that cannot be reversed for reasons related to the second law of thermodynamics. They are converted to higher-entropy products (like a fried egg). Heat accelerates the process, but removing the heat does not reverse it.
