how do you simplify these two expressions?

2(m^2+1)

3(m^2+1)-(m^2+1)

multiple 2 into the brackets then solve for m

The first one is simplified enough already, but can also be written as
2 m^2 + 2.

The second one can be simplified as
2(m^2 + 1)
